Quinoa & Oat Granola

1  cup quinoa, rinsed well

1  can light coconut milk, or 15oz milk of your preference

1 tsp cinnamon

2  tsp vanilla

1/4  cup flax meal

1/2 cup chopped cashews

1/4 cup sunflower seeds

1  cup rolled oats

dash of salt

1/8  tsp nutmeg

1/2  tsp cinnamon

dash of ground cloves

1  Tbsp brown sugar

4  Tbsp brown rice syrup or pure maple syrup

Bring quinoa, milk, 1 tsp cinnamon, and vanilla to a boil.  Reduce heat and simmer 15 mins or until milk is absorbed. 

Preheat oven to 350°.  Once quinoa is cooked mix it along with remaining ingredients until combined.  Spread onto baking sheet and bake about 45 minutes, stirring every 10 minutes, until the mixture is golden brown and mostly dried.  Let the granola cool completely before storing.
