1 egg, lightly beaten
1 1/2 cups oats
1/4- 1/3 cup brown sugar
1/2 cup milk (or soy, rice, hemp milk)
1/4 cup olive oil (I used pumpkin butter. Applesauce or mashed bananas would work too)
1 tsp baking powder
1/2 tsp salt (I used a little less)
1/2 tsp cinnamon
*Add in your favorite chopped nuts or dried fruit. I added some chopped dried dates to part of my batch.
Combine all ingredients in a bowl; mix well. Pour into a greased 8-in square baking dish. Bake at 350° for 25-30 minutes. Let cool. Cut into squares.
