This morning we hosted a shoe drive for Soles 4 Souls at our yoga studio. You know that expression “walk a mile in someone else’s shoes”? Well, I learned from this organization that so many people all over the world live without any shoes at all causing disease and infections which can be life threatening. There are so many issues and problems than my narrow mind doesn’t ever think about day-to-day like how important shoes are (and no, I don’t mean to complete the perfect outfit)!
There are five of us that teach at our studio so we took turns teaching today which was lots of fun! It really made me realize how different our teaching styles are which is great- something for everyone! Afterward we got a little goofy.
On a different note; I may have developed a slight addiction to cheesy vegan kale chips! Today I got to work trying to recreate the ones I bought in Bozeman. I started with cashews and hemp seeds in the food processor…
then added chopped red pepper, lemon juice and sea salt; blended till creamy…
tossed the mixture over one bunch of kale…
and roasted it in the oven for what seemed like forever at 200°F (about 2 hrs) till it was nice and crispy. If you have a dehydrator that’s the way to go; then you can keep more enzymes intact by going raw 🙂
Success! Now I’m enjoying a tasty snack of fresh made kale chips and Kombucha 😉 These little “chips” are not only good but good for you too! Kale is full of vitamins K, A and C and fiber. The cashew and hemp seeds add healthy fats and a little protein too. I highly recommend giving these a try!
Cheesy Kale Chips
2/3 cup cashews
1/3 cup hemp seeds
1/2 tsp sea salt
1 red pepper, chopped
Juice of 1 lemon
Blend it all up till smooth and creamy. Toss over kale torn into pieces. Dehydrate or bake at 200°F till dry and crispy. *This “cheese” would also be awesome as a dip for crackers or veggies
